“It's 6am and the boulangerie has just opened with freshly-baked buttery croissants and loaves fresh out of the oven, gingerbread, Sachertorte and an oak tray of pastries dusted with icing sugar.”

Nose : Buttery croissants, gingerbread, plaited loaves straight out of the oven, walnut and coffee cake with extra buttery icing, fondant fancies, moist starfish pastries topped with icing sugar, pineapple upside down cake and orange cake. The boulangerie-pâtisserie nose with its oak oven paddle is accompanied by chocolate cherry liqueurs, Swiss milk chocolate animals, bananas Foster dessert and there are fruity notes of red berries, blueberry, blackcurrant and cherry lollipops.
Palate : Beautifully soft mouthfeel with wonderful fruity notes, including peaches with a drizzle of condensed milk, Mirabelle plums, fresh pineapple, blackcurrant and early morning Alpine meadows with dewy flowers such as violets and edelweiss, waking up in the gentle sun. There's plasticine and cola cubes, plus a spicy cedar wood tray full of heavy pulp paper and an oak platter of desserts with Sachertorte, Black Forest gateau and pineapple fritters.
Finish : Long and lingering with pineapple tart and rich and creamy vanilla and rose macarons.
Nose with water : Fire embers in an orchard with spring flowers and a freshly painted shed on a nearby chalk escarpment. There are waxy lemons and caramelised bananas.
Palate with water : It's a juicy fresh fruit salad with raspberries, strawberries, bananas, peaches and blueberries. A oak bowl with ginger, white pepper and cinnamon spices and a wonderfully chewy mouthfeel.
Finish with water : Caramelised bananas in a spicy sauce with cardamom and star anise, followed in the long and lingering finish by fruity chewing gum.
