Colour: Pale gold
Nose: The aniseed is clearly present, there's no doubt it's a pastis! Added to this are notes of fresh herbs and spices, thyme and rosemary are accompanied by a subtle lemony touch, all enhanced by a sea breeze transporting us to the sea with a few fragrances of a faraway chimney.
Palate: Still from a maritime terroir, the palate is full of freshness, with the aniseed enveloped in herbs, each more aromatic than the last, a bit of lemon thyme, a few sprigs of rosemary, badian, enhanced by gentle peppery notes, ending up around a campfire on the beach, grilling seafood, finally enjoyed with some sea lettuce leaves. Enjoy a three-stage tasting experience, with the first stage neat, before trying on the rocks to intensify the freshness of this spirit, and finally adding a little water to give way to thyme and sea breezes.
Finish: Cool, iodised sea breeze combines with light smoke to give extra length to this smooth finish, subtly balanced between aniseed and iodine notes.
Conclusion: Enjoy a Pastis in front of the sea, with a sea breeze adding a hint of iodine in this early autumn, and the smoke from the nearby chimney bringing out the flavours.
