Bottled exclusively for The Antelope Macau
« The fiddler picks up their bow at the foot of the castle ruins near the edge of the cliffs and plays to the sea mist, notes skipping through the apple trees and wild herbs, ripe with fruit and promise. »
Colour : Apple juice
Nose: Dunnage, overripe windfall apples on a damp autumn morning, tobacco, salt water taffy, liquorice, graphite powder, freshly polished violin and bow, moss-lined rocks, baked apples with sultanas and cloves, crème caramel, orange chocolate, dark chocolate and milk chocolate-covered raisins and hazelnuts, plus peaches and Mirabelle plums.
Palate: So soft and creamy, the initial fruitiness gives way to oak and spice with linseed oil, a spiced hot chocolate topped with whipped cream and a dusting of nutmeg, plus stewed apples with cinnamon in a bowl of warm custard and sultanas.
Finish: Spiced hot chocolate and clove balls.
Conclusion: A deep and fruity Cognac, perfect as a digestif or even instead of dessert.
