Colour: Clear
Nose: Crisp juniper and citrus forward, angelica, jelly babies, olive, basil, sage, rosemary, grass, moss, brambles and orchards.
Palate: Clean and smooth with a deliciously oily mouthfeel. Beautifully balanced juniper and citrus with basil, rosemary, bay, olives, capers, celery and butter biscuits.
Finish: Capers, cashew nuts and melon.
Nose with tonic water: Lemon drizzle cake, buttered toast with lemon curd, olive bread, celery, a travel tin of hard-boiled sweets, and a hint of juniper and black pepper at the end.
Palate with tonic water: Juniper, lemon sorbet, orange sorbet, buttered olive bread, celery seeds, angelica, hay, pickled cucumber, black pepper and horseradish.
Finish with tonic water: Juniper, lemon, pink grapefruit.
Conclusion: A crisp and clean dry gin with Mediterranean notes, perfect with Kardinal tonic water or ginger ale, or mixed in a Gin and It, Dirty Martini or Red Snapper.
