Palate : Much heavier smoke than the nose suggests, it's tarry with engine oil, sweet peat, Chinese five spice, duck in hoisin sauce, noodles with beansprouts, bamboo chopsticks, sea breeze and rye.
Finish : Tar, rye and slightly sweet engine smoke with hints of daiquiri.
Nose with water : Hot oil smoking in a copper pan, engine oil, tar, ropes, old magazines, pulpy newspaper, rubber-heeled shoes, prawn crackers, sweet chilli, sauce, pak choi in oyster sauce and chicken in pandan leaves dipped in hoisin sauce.
Palate with water : Smoky engine, tar, oak table, black China jasmine tea, pancake duck with plum sauce, Chinese five spices, seabass, plus cardamom, cloves and star anise.
Finish with water : Spices continue, softening to chai tea, plus smoky oil in a wok.
