Elaborated from a 19 years old Calvados with a finish of one month in a Long Pond Rum cask (cask from our 2007 Long Pond released earlier this year within Swell & Co series)

Colour : Heavily-oaked Chardonnay
Nose : Dirty esters from overripe bananas, overripe windfall pears, apple jelly, leather fencing gloves and polished metal foils, plus mint jelly, ripe strawberries, fruit trifle with chocolate shavings, extra custard and lashings of sherry.
Palate : Metal chains, polished silver cutlery, it's gloriously, dirtily funky! Mint and sage jellies on a thick slab of broiled pork, ramen soup.
Finish : Ramen soup with pork, spring onions and noodles and a cardboard box of apple jellies topped with icing sugar.
Nose with Water : Chicken ramen in a heavily-glazed earthenware bowl on a metal tray, clashing foils and a fencer's mask with powder, plus plimsolls scraping over a recently polished gym floor, minty mouthguard, spiced plum tart, apple turnovers and tarte tatin.
Palate with Water : It's chewy and so floral with Parma violets, rose, hydrangeas, lavender and hollyhocks, plus dark chocolate rose and violets and milk chocolate buttons.
Finish with Water : A soapy finish with lavender shortbread, milk chocolate mint bars, aniseed balls, crystallised ginger, butterscotch and vanilla and banana fudge.
