"A busy market on the village green surrounded by trees, full of wooden stalls laden with freshly tanned boots, exotic fruits, and rhubarb and ginger pies encased in buttery pastry"

Colour : Mahogany.

Nose : A celebration of wood with cedar, oak and horse chestnut opens the nose with bluebells nestling in their shadow, the scent of very ripe bananas is joined by fig, red grapes, peach, cantaloupe melon and apricot. A large dessert platter with chocolate-covered bananas, dark chocolate profiteroles oozing with Chantilly cream, crème brûlée and crème caramel sits on a oak refectory table polished with beeswax, alongside a plate of fresh oysters with red wine vinegar, plus a pot of mixed ground spice. A woollen jumper on the back of a heavy antique oak carver captured camphor notes with a little pipe tobacco on the sleeves, a packet of mints left in the pockets.

Palate : There's a hint of the tanneries, plus apple sauce and sage, balsamic vinegar sweet lassi, aromatic bitters, wormwood and raisin wine. A fruit salad with sliced pineapple, mango, orange, strawberries, raspberries, grapes, edible flower petals and orange blossom honey sits on the beeswax-polished refectory table next to a rhubarb pie scented with ginger and nutmeg. A leather tobacco pouch by a steaming mug of spiced hot chocolate.

Finish : It's a comforting long and lingering dry finish with rancio, prunes, leather and dry wood, plus ginger and rhubarb pie in crumbly buttery pastry with a dash of thick, syrup dessert wine stirred in. After a few minutes, berries emerge. Give it time to reveal its secrets and you'll be rewarded.
