Nose with water : Water reveals the stylish Palo Cortado finish, plus crystallised cherry on a sticky bun, heather honey on hot buttered crumpets, chocolate spread melting on hot waffles, lemon and ginger curd, rose and geranium curd, thick strawberry milkshake, raspberry coulis, goji berries in Chinese cabbage soup, Chinese duck rolled in pancakes with spring onions and hoisin sauce
Palate : Smooth and creamy with ginger and mace spices dancing on the tongue. There's hot chai tea with honey and lemon, sticky lemon bun and the creaminess of the Palo Cortado
Finish : Sauvignon blanc with a little ginger spice and honey latte
Palate with water : Soft mouthfeel with water but the spices kick in immediately – ginger, cardamon, star anise, cloves and cumin. Hot buttered crumpets with raspberry jam, sesame breadsticks dipped in lemon curd
Finish with water : Clarified butter with nutmeg, plus crystallised ginger
