Jamaican Rum distilled at Clarendon in 1996, aged in an ex-Bourbon cask, including 22 years in the tropics, Cask Strength at 59.9% ABV (strength subject to change before bottling), 200ml
Colour: Deep Mahogany
Nose: From the very first seconds, the glass overflows with tropical fruits pushed to their absolute limits. Ultra-ripe mango, crushed papaya, candied pineapple and sun-drenched apricot intertwine in an endless profusion. Behind this avalanche of fruit lies a wilder, slightly dirty side that brings tremendous character and individuality to the profile. A few tangy notes lift the whole experience, while hints of tarte Tatin, baked apple and a beautiful woody imprint gradually emerge, adding depth and structure to the nose.
Palate: A true explosion of fruit. Tropical markers are everywhere. Then, much like on the nose, the profile becomes darker and dirtier: empyreumatic notes, warm wood, light soot and overripe fruits intertwine in a broad and expressive palate. An unexpected layer of indulgence develops around a buttery brioche fresh from the oven, accompanied by a subtle touch of coconut lingering discreetly in the background.
Finish: Long and constantly evolving. Tropical fruits slowly intertwine with deep notes of noble oak, baked apple and red fruits. Blackcurrant takes centre stage, joined by hints of blackberry and stewed raspberry, while the empyreumatic notes extend the experience again and again.
Conclusion: An exuberant and complex rum, where the opulence of very ripe tropical fruits meets a rawer, darker and slightly untamed dimension. Between overripe fruits, warm brioche, precious wood and empyreumatic notes, it delivers an intense and fascinating tasting experience that never stops evolving in the glass.
